Healthy Vegetarian Dinner Recipes


Vegetarians do not eat meat yet that does not mean they do not have tasty meals. They eat many wonderfully flavored meals that are very nutritional. Here are some very tasty recipes designed for any vegetarian.
Vegetarian Lasagna
Ingredients:
Lasagna noodles eggs ricotta cheese cottage cheese Italian seasoning spinach mushrooms garlic onions broccoli carrots pepper milk 1 cup mozzarella cheese ¼ cup of flower and ½ cup of Parmesan cheese.
Cook lasagna noodles until soft.
Combine in a mixing bowl eggs ricotta cheese cottage cheese and Italian seasoning.
Heat skillet with medium heat setting. Add olive oil and cook mushrooms onions and garlic until they are tender. Add pepper and flour to thicken mixture then pour in milk. Stir until mixture thickens. Remove from heat.
Add spinach carrots Parmesan cheese and broccoli to skillet mixture.
Lightly grease a baking dish with olive oil. Layer noodles completely covering bottom of dish. Spread tomato sauce on noodles. Add 1/3 of the cottage cheese mixture then 1/3 of the vegetable mixture. Sprinkle 1/3 of mozzarella cheese. Add two more layers of the same combination. Sprinkle Parmesan cheese over the top of the finished dish and back in oven for 30 to 40 minutes at 350 degrees. Allow the dish to stand 10 minutes before serving.
Vegetarian Meatballs
Ingredients:
One 12-ounce package of frozen precooked vegetarian protein crumbles thawed
Two eggs slightly beaten
¼ cup of Italian dry breadcrumbs
Two cloves of minced garlic
Two tablespoons grated parmesan cheese
Two tablespoons Italian herbs
½ teaspoon of crushed fennel seeds
Combine all the ingredients and mash using a fork. Form mixture into balls. Bake in pan in oven at 350 degrees for 10 minutes.
Add the vegetarian meatballs to sauce and use as a sub sandwich finger foods or to a pasta dish.
