Easy Healthy Meals – Chicken Marsala

Easy Healthy Meals – Chicken Marsala
The secret to turning this dish into a slim meal is the use of chicken cutlets. These cutlets are definitely thinner than chicken breast, so you’re assured that you’re having a good dose of lean protein with the same tender taste. This is one of those easy healthy meals that are best served with a fresh juice of choice.
Ingredients:
3 tablespoons whole-wheat flour
¼ teaspoon white pepper
3 cups mushroom, drained and finely chopped
½ cup Marsala wine
½ teaspoon thyme leaf, freshly chopped
3 tablespoons white flour
2 lbs. chicken cutlets
2 tablespoons shallots, thinly sliced
½ cup chicken broth
2 tablespoons chopped parsley
Directions:
In a shallow bowl, bring together 3 tablespoons of white and whole-wheat flour, and white pepper. Dredge chicken cutlets into the mixture and set aside.
Lightly coat a large skillet with cooking oil and heat it over medium-high. Add the chicken in the nonstick skillet and fry up until the chicken is lightly browned. Remove the cutlets from the pan and put it in a separate plate to cool.
Next, add the mushrooms and shallots and stir the mixture for about 2 minutes. Add ½ cup of Marsala wine to the pan. Reduce to a glaze, and make sure to take away any loose brown bits found in the pan.
Moderate the heat and add the parsley, broth, and thyme. Let it simmer or until such time that the broth is reduced by half.
Return the chicken to pan and let it boil for 5 more minutes. Serve while hot.
